Default Cake Decorating Business out of your home

What are some legal contacts that you can have drawn up to protect you while you are selling baked goods? I live in Louisiana. Please advise me of some suggestions about clauses and if they work if your customer's sign them like an invoice saying they were satisfied and you are not held responsible. Thanks for the info.
